- Preheat oven to 400oF. Grease twelve 21/2 inch muffin cups or line with paper baking cups;
set aside. In a medium bowl combine flour, sugar, baking powder, and salt. Make a well in center of flour
mixture; set aside.
- In another bowl combine eggs, milk, and oil. Add egg mixture all at once to the flour mixture. Stir just until moistened.
- Spoon batter into prepared muffing cups, filling each two-thirds full. If desired, prinkle Steusel Topping over muffin batter in cups. Bake for 18 to 20 minutes or until golden and a wooden toothpick inserted in center comes out clean. Cool in mufin cups on wire rack for 5 minutes. Remove from muffin cups; serve warm.
